Ingredients:

For the Chicken and Vegetables:

  • 6-8 chicken thighs (bone-in, skin-on imparts the best flavor)
  • 1 pound baby red potatoes, cut into large bite-sized pieces
  • 1 pound carrots, peeled and sliced

Directions
