Honey Lemon Bars with Shortbread Crust

Ingredients:

Crust Ingredients:

  • 3/4 cup Butter
  • 3/4 cup Coconut Sugar
  • 1 1/4 cup Flour
  • 1/2 teaspoon Vanilla Extract
  • 2 1/2 tablespoons Water

Bar Ingredients:

  • 5 large Eggs
  • 6 tablespoons Ambrosia Honey
  • 2 cups Sugar
  • 1 1/2 cups Lemon Juice, freshly squeezed
  • 2/3 cup Flour
  • 1/4 cup Powdered Sugar
  • 1 package Blueberries (optional)
  • 1 package Raspberries (optional)
Overview

These light and delicious honey lemon bars are the perfect dinner party dessert. Impress your friends with a delicious zesty and sweet bite!

Directions
  1. Preheat your oven to 350°
  2. Add shortbread crust ingredients to a medium sized mixing bowl. Mix together until it is a dough consistency.
  3. Evenly press the shortbread crust dough to the bottom of a 9×13 pan. Bake for 15-17 minutes. Remove from oven when cooked.
  4. Whisk lemon bar ingredients together until a completely smooth consistency. Evenly pour lemon bar filling over crust and place back into the oven for about 18-20 minutes at 325°.
  5. Remove from oven and let cool. Once cooled, place in the refrigerator to let the bars harden and gain their shape.
  6. Sprinkle the cooled pan with powdered sugar and add blueberries/raspberries (optional) for an additional sweet taste!
  7. Slice bars into your desired shape, transfer to a serving plate and enjoy!
