Good Morning Muffins

Ingredients:
  • 2 cups grated carrot
  • 1 cup Madhava Natural Sweeteners Organic Coconut Sugar
  • 1/2 cup whole wheat flour
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 tablespoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon ground ginger
  • 2 eggs
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla
  • 1/4 cup raisins, plumped in warm water and drained
  • 1 (8-ounce) can crushed pineapple, drained
  • 1/3 cup chopped walnuts

Directions
  1. Preheat oven to 375 degrees.
  2. Combine grated carrot and Madhava Organic Coconut Sugar in a mixing bowl. Set aside while preparing remaining ingredients to allow sugar to draw liquid out of carrot.
  3. In a separate bowl, combine both flours, baking soda, salt, cinnamon, nutmeg, and ginger. Set aside.
  4. In a large mixing bowl, beat eggs. Mix in oil and vanilla. Stir in drained raisins, drained pineapple and carrot mixture with all accumulated liquid; mix well. Add dry ingredients and stir until just combined. Stir in walnuts.
  5. Spoon mixture evenly into 12 greased muffin cups. Bake for 18 to 20 minutes or until a toothpick inserted in the center comes out clean. Cool in pan 5 minutes before removing to a wire rack to cool.
