Thai Peanut Hummus With Organic Agave

Ingredients:
  • 1 15-ounce can chickpeas, rinsed and drained
  • 3 tablespoons creamy peanut butter
  • 2 tablespoons hot pepper sauce, plus more for extra spice
  • 1/4 teaspoon ground ginger
  • 2 cloves garlic, minced
  • 1 tablespoon Madhava Natural Sweeteners Organic Amber Raw Agave
  • Pinch of salt and pepper
  • 1 tablespoon coconut oil, melted
  • 1/4 cup cold water
  • Handful raw unsalted peanuts, rough chopped
  • 2 green onions, chopped
  • Handful fresh cilantro, rough chopped
  • 1 lime, zested and juiced

Homemade hummus is a great snack to keep on hand – it’s packed with protein from chickpeas, it’s a tasty dip for carrot and cucumber sticks, and is easily customizable with your favorite savory flavors! In this hummus recipe, we’ve mixed in creamy peanut butter, hot pepper sauce for a little kick, coconut oil and a delicious drizzle of our Organic Amber Raw Agave; then we topped the smooth chickpea hummus with unsalted peanuts for a satisfying crunch in every bite.

Directions
  1. Add chickpeas, peanut butter, Sriracha, ginger, garlic, agave, salt and pepper to the bowl of food processor and process for 30 seconds, then scrape down the sides. Begin processing again and slowly drizzle melted coconut oil and ice water, processing until the mixture becomes smooth and creamy.
  2. Remove to a serving bowl and fold in peanuts, green onions and cilantro. Squeeze on fresh lime juice and serve with tortilla chips and veggies.
