Sweet Potato Tacos With A Honey Lime Sauce

Ingredients:
  • 1 pound sweet potatoes, diced
  • 1/4 cup olive oil, divided
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/4 teaspoon coriander
  • 1/4 teaspoon cayenne
  • Pinch of salt and pepper
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 1 (14.5-ounce) can black beans, rinsed and drained
  • 1 cup corn
  • 1/4 cup Madhava Natural Sweeteners Organic Pure & Raw Honey
  • 2 limes, juiced
  • Corn or flour tortillas
  • Feta cheese, for garnish

Taco Tuesday is getting a little bit sweeter with these delicious Sweet Potato Tacos with a Honey Lime Sauce! Madhava Natural Sweeteners Organic Pure & Raw Honey mixed with freshly squeezed lime juice makes the perfect dressing for these veggie tacos, and the leftover sauce is a great marinade for chicken or shrimp dishes.

Directions
  1. Preheat oven to 425°F and line a baking sheet with parchment paper. Place sweet potatoes in an even layer on parchment paper and drizzle with 3 half of olive oil, tossing lightly to coat evenly. Sprinkle with cumin, paprika, coriander, cayenne, salt and pepper, then bake for 15 – 20 minutes until fork-tender.
  2. Meanwhile, place a large skillet over medium heat with remaining olive oil and saute onion until caramelized and golden brown on the edges, about 5 minutes. Stir in garlic and reduce heat to medium-low. Add black beans and corn, stirring and cooking until heated through.
  3. In a small bowl, whisk together Madhava Natural Sweeteners Organic Pure & Raw Honey and lime juice, set aside.
  4. Spoon sweet potatoes and black bean mixture onto tortillas or taco shells, drizzle with honey lime sauce and top with feta. Serve warm. 5. Store extra filling and sauce in air-tight containers.
