Pumpkin Pie

Ingredients:
  • 1 15-ounce can pumpkin puree (or 1½ cup roasted pumpkin, pureed in food processor)
  • 3 large eggs
  • ½ cup full fat coconut milk
  • ½ cup Madhava Natural Sweeteners Organic Pure & Raw Honey
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/8 teaspoon sea salt
  • 1 Pie Crust, unbaked (we like this Paleo Pie Crust from Elana’s Pantry)

Directions
  1. Preheat oven to 350° F.
  2. In a food processor, combine pumpkin puree and eggs
  3. Pulse in coconut milk, honey, cinnamon, nutmeg, and salt
  4. Pour filling into pie crust
  5. Bake at 350° F for 45 minutes
  6. Allow to cool then refrigerate for 2 hours to set
