- 1/2 cup butter, softened

These bite-sized snowball cookies are delicious, easy to make, and are a great option for your holiday cookie swaps! They also freeze really well, so go ahead and double the batch so you can have a tasty treat whenever the craving hits.

Directions
- Preheat oven to 300°F and line a cookie sheet with parchment paper.
- Place butter in the bowl of a stand mixer and beat until soft. Add organic coconut sugar, vanilla and chopped pecans, and mix until just combined. Slowly pour in flour, and mix again until just combined.
- Spoon out tablespoon-sized balls of dough and roll between the palms of your hands. Arrange on parchment-lined cookie sheet and bake for 15-20 minutes, until light in color (do not brown).
- Remove from the oven and roll cookies in powdered sugar while they’re still warm. Place on a cooling rack, and roll in powdered sugar again once cooled.
