Pecan Snowball Cookies

Ingredients:
  • 1/2 cup butter, softened
  • 2 tablespoons Madhava Natural Sweeteners Organic Coconut Sugar
  • 1 teaspoon vanilla
  • 2/3 cup pecans, finely chopped
  • 1 cup flour
  • Pinch of salt
  • Powdered sugar, or pulse Madhava Natural Sweeteners Organic Coconut Sugar in a food processor until fine and powdered

These bite-sized snowball cookies are delicious, easy to make, and are a great option for your holiday cookie swaps! They also freeze really well, so go ahead and double the batch so you can have a tasty treat whenever the craving hits.

Directions
  1. Preheat oven to 300°F and line a cookie sheet with parchment paper.
  2. Place butter in the bowl of a stand mixer and beat until soft. Add organic coconut sugar, vanilla and chopped pecans, and mix until just combined. Slowly pour in flour, and mix again until just combined.
  3. Spoon out tablespoon-sized balls of dough and roll between the palms of your hands. Arrange on parchment-lined cookie sheet and bake for 15-20 minutes, until light in color (do not brown).
  4. Remove from the oven and roll cookies in powdered sugar while they’re still warm. Place on a cooling rack, and roll in powdered sugar again once cooled.
