Matcha Green Tea Cupcakes With Homemade Matcha Buttercream

Ingredients:

For the Matcha Green Tea Cupcakes:

  • 1 cup flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 2 tablespoons matcha powder
  • 1/4 cup butter, room temp
  • 3/4 cup Madhava Natural Sweeteners Organic Coconut Sugar
  • 1/2 cup milk, room temperature
  • 1 egg

For the Matcha Buttercream Frosting:

  • 2 cups powdered sugar
  • 1/2 cup butter, room temperature
  • 2 teaspoons matcha powder, plus more for garnish
  • 2 tablespoons milk (optional, depending on desired consistency)

Directions

For the Matcha Green Tea Cupcakes:

  1. Preheat oven to 350°F and line a muffin tin with paper liners.
  2. In a small bowl, sift together flour, salt, baking soda, baking powder, and matcha powder.
  3. In the bowl of a stand mixer, cream together butter and coconut sugar on medium-high speed until light and fluffy, 3 to 5 minutes. Add egg and mix on medium until combined. Reduce speed to low and add flour mixture and milk, mixing until just combined.
  4. Fill the lined cups about halfway with batter, and bake until the cupcakes spring back when touched, about 15 minutes. Rotate the tray halfway through baking to ensure they cook evenly. Allow to cool for 5 minutes before transferring cupcakes to a wire rack to cool completely before frosting.

For the Matcha Buttercream Frosting:

  1. In the bowl of a stand mixer fitted with the paddle attachment, or using a hand mixer, cream butter until smooth and fluffy. Gradually beat in powdered sugar until fully incorporated. Beat in matcha powder.
  2. Pour in milk and beat for an additional 3-4 minutes. Remove to a piping bag and chill in refrigerator until ready to use.
