Watermelon Feta Salad With Agave Balsamic

Ingredients:
  • 1/2 Mini Watermelon
  • 4 Tomatos
  • 1/2 Small Red Onion
  • 1 Block Feta
  • 1/2 Package Fresh Mint
  • 1/2 Package Fresh Basil
  • Juice of 3/4 Lemon
  • 1 cup Olive Oil
  • 1/3 cup Balsamic Vinegar
  • 2 tbsp Madhava Natural Sweeteners Organic Light Agave Nectar
  • Salt & Pepper
Overview

This superb summery salad recipe takes a classic greek combo and pumps up the natural sweetness with crisp watermelon and refreshing mint and a drizzle of lemon balsamic made with Madhava Golden Light Agave.

Directions
  1. Cut watermelon, tomato (seeds removed), red onion and feta into similar sized cubes. Gently rinse, pat dry and tear fresh basil and mint. Toss all ingredients together and set aside
  2. Lemon Balsamic Vinaigrette: Whisk olive oil, balsamic, lemon juice, agave and salt & pepper vigorously to combine. Drizzle over watermelon salad and enjoy!

*Note: If you are making this salad ahead of time, it is best to leave the feta and red onion of to the side until you are ready to serve.
