Grilled Corn With Honey Sriracha Aioli

Ingredients:
  • 8 ears of corn
  • 3/4 cup raw cashews, soaked in water overnight (or in boiling water for 1 hour)
  • 5 cloves garlic, minced/smashed
  • 1/4 cup water
  • 1 tablespoons olive oil
  • 1 tablespoon Madhava Natural Sweeteners Organic Pure & Raw Honey
  • 1/2 lime, juiced
  • Pinch of salt and pepper
  • 1 teaspoon hot sauce, plus more to taste
  • Pinch of chili powder, smoked paprika, and cumin
  • 1/2 teaspoon nutritional yeast
  • Garnish: Fresh lime wedges, red pepper flakes, chopped cilantro

The warm weather of summer is finally here, and farmers markets and grocery store stands are filling up with one of our favorite veggies of the season: sweet summer corn! Did you know that corn is actually a vegetable, a grain and a fruit? Talk about a fresh food trifecta.

Making grilled corn is simple and quick to prepare, and this Honey Sriracha Aioli made with Madhava Natural Sweeteners Organic Pure & Raw Honey adds amazing flavor that your taste buds will crave all summer long.

Directions
  1. Preheat grill to medium. Place un-husked corn in a large bowl and cover with cool water for 10-20 minutes to keep it from burning too much on the grill.
  2. While corn is soaking, prepare aioli. Drain the cashews and add to the bowl of food process along with garlic, water, olive oil, honey, lime juice, salt, pepper, hot sauce, spices and nutritional yeast. Mix until smooth and creamy, then set aside.
  3. Place un-husked ears of corn directly on hot grill and cook for about 10 minutes with the lid closed flipping halfway through. Then, pull back the husks and return ears of corn to the grill and cook until the corn is a deep golden brown.
  4. Remove to a serving dish and drizzle with spicy aioli and additional lime juice. Sprinkle with red pepper flakes and chopped cilantro if desired, and serve warm.
