Spiced Chickpea Avocado Toast

Ingredients:

For the Spiced Chickpeas (makes enough to top 4-6 slices of avocado toast):

  • 1 can chickpeas, rinsed and drained
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 2 teaspoons smoked paprika
  • 1 teaspoon chili powder
  • Drizzle of Madhava Natural Sweeteners Organic Pure & Raw Honey, to taste

For the Avocado Toast:

  • 2 slices of bread
  • 1 large avocado

Garnish: 1/2 lime, fresh sprouts or microgreens, hot sauce, Madhava Natural Sweeteners Organic Pure & Raw Honey

Overview

We love toast in basically every form – peanut butter and honey, cinnamon sugar, bruschetta, and of course, Avocado Toast. We also love chickpeas and how versatile they are! In this recipe, we took the classic Avocado Toast and added some crispy spiced chickpeas for a satisfying crunch; then, we took it a step further and tried drizzling a slice with hot sauce, or enjoying with microgreens. You’ll be pleased to know that both options are equally delicious.

Directions
  1. Place a skillet over medium-high heat. Once hot, add olive oil and chickpeas and stir. Mix in spices and honey, and continue cooking and stirring until chickpeas become fragrant and a little crispy, about 10-15 minutes.
  2. Toast the bread.
  3. Slice avocado and use a fork to mash and spread it on the toast.
  4. Garnish: squeeze fresh lime juice over mashed avocado to add flavor. Top with crispy chickpeas, then add sprouts, hot sauce, and a drizzle of organic honey, as desired.
