Shredded Smoked Honey Chicken Tacos

Ingredients:
  • 1 cup Salsa Verde
  • ¼ cup Madhava Organic Honey
  • 1 teaspoon Cumin
  • ½ teaspoon Salt
  • 1 teaspoon Liquid Smoke
  • 2 cloves Garlic, minced
  • ½ cup fresh Cilantro, chopped
  • 2-3 lbs boneless, skinless Chicken Breast
  • Corn Tortillas
  • ¼ teaspoon Cayenne Pepper
  • Optional toppings: cilantro, avocado, tomato, red onion, jalapeño, sour cream

Directions
  1. Whisk salsa verde, honey, liquid smoke, cumin, and salt together.
  2. Add salsa verde mix and chicken to instant pot (pressure cooker).
  3. Secure lid and cook on high pressure for 12 minutes, let pressure naturally release for 10 minutes before manually releasing.
  4. Shred chicken with 2 forks into a medium sized bowl, add cilantro and mix together.
  5. Assemble tacos on tortillas with your desired toppings and enjoy!
