Mini Honey Cookies

Ingredients:
  • 1/2 cup Madhava Natural Sweeteners Organic Coconut Sugar (sifted) plus extra for rolling
  • 1/2 cup (1 US stick) salted butter
  • 1 egg
  • 1/4 cup Madhava Natural Sweeteners Organic Very Raw Honey
  • 1 1/2-2 cups spelt flour (less gives more of an oatmeal cookie type consistency)
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/2 teaspoon nutmeg
Overview
Directions
  1. Preheat oven to 350 degrees.
  2. Cream butter and coconut sugar with mixer for 2-3 minutes.
  3. Add egg and our scrumptious Organic Pure & Raw Honey and mix until combined.
  4. Combine all dry ingredients together and add in two batches to wet mixture.
  5. Line two cookie sheets with parchment paper.
  6. Using a teaspoon (not a typo) scoop out a completely rounded scoop (about 2 teaspoons total) and roll in coconut sugar. Press flat in hand and shape round. They will be the size of quarters roughly and will double in size.
  7. Bake for 9 minutes. Allow to cool completely then serve plain, drizzle with honey, or a simple glaze if desired.
