Grilled Pineapple Jalapeño Skinny Margarita

Ingredients:
  • For the Jalapeño Infused Tequila:
  • 1 cup silver tequila
  • 1 jalapeño sliced into rings
  • For the Pineapple Jalapeño Skinny Margaritas:
  • 1 1/2 ounces jalapeno infused tequila
  • 1/2 ounce triple sec
  • 1 pineapple, cut into 1-inch thick slices
  • 2 tablespoons olive oil
  • 1 lime, juiced
  • 2 tablespoons Madhava Natural Sweeteners Organic AgaveFIVE, or more to taste
  • 3/4 cup cold water
  • 1 teaspoon vanilla extract
  • Crushed ice
  • Garnish:

Directions

For the Jalapeño Infused Tequila:

  1. Add tequila and jalapeño slices to a sealable container, stirring to combine. Place in refrigerator for 12-24 hours, depending on how spicy you’d like it. Strain the jalapeños nd discard after use. Store in freezer for up to 1 year!

For the Pineapple Jalapeño Skinny Margaritas:

  1. Preheat grill to high heat. Lightly brush pineapple slices with olive oil and place on grill, grilling each side for 4-5 minutes. Remove from grill, place in a bowl and in the refrigerator to cool.
  2. To a blender, add jalapeno infused tequila, triple sec, 2 slices of the grilled and chilled pineapple, any pineapple juice that accumulated in the bowl, lime juice, Madhava Natural Sweeteners Organic AgaveFIVE, water, and vanilla. Blend until smooth and strain through a fine mesh strainer or cheesecloth to remove pulp.
  3. Rim the glasses with Madhava Natural Sweeteners Organic Coconut Sugar, garnish with grilled pineapple and sliced jalapeño, fill the glass with ice and pour in your margarita!
