Ginger Cookies

Ingredients:

Makes 14-16 cookies:

  • 1 cup butter (softened)
  • 1 3/4 cup Madhava Natural Sweeteners Organic Coconut Sugar
  • 1/2 cup Madhava Natural Sweeteners Organic Raw Agave Nectar
  • 1 egg
  • 1/3 cup molasses
  • 3 1/4 cups all-purpose flour
  • 1 1/4 teaspoons baking soda
  • 1 tablespoon cinnamon
  • 2 tablespoons fresh grated ginger (or 2 1/2 tablespoons ground)
  • 1 teaspoon ground cloves
  • 1 teaspoon nutmeg
  • 1/2 teaspoon salt
  • extra coconut sugar to sprinkle on cookies

Directions
  1. Preheat oven to 350 degrees.
  2. Cream butter with Madhava Organic Coconut Sugar and Madhava Organic Agave Nectar in a mixing bowl. Beat in egg and molasses.
  3. In a separate bowl, combine flour, baking soda, cinnamon, ginger, cloves, nutmeg and salt. Mix dry ingredients into creamed mixture just until blended.
  4. Using a 1-tablespoon scoop, spoon dough onto baking sheets (lining baking sheets first with parchment paper works well), placing scoops of dough 2 inches apart. Sprinkle lightly with extra Madhava Organic Coconut Sugar.
  5. Bake 10 to 12 minutes for softer cookies, longer for crispier cookies.
