EVOO Ice Cream

Ingredients:
  • 1 1/3 cup Whole Milk
  • 1/2 cup Cocoa Powder
  • 3/4 cup Sugar
  • Pinch of Salt
  • 1/2 Vanilla Bean
  • 3 Egg Yolks
  • 1 cup Heavy Cream
  • 1/2 cup Madhava Extra Virgin Olive Oil

Directions
  1. Combine milk, cocoa powder, sugar, vanilla bean in a small-medium saucepan, bring to a boil on medium heat.
  2. Remove from heat and steep for 1 hour, covered.
  3. After 1 hour, strain the mixture into a mixing bowl.
  4. In a medium bowl, mix together cream, egg yolks and olive oil.
  5. Transfer mixture to a small-medium saucepan. Slowly stream heated milk mixture, continuously whisking.
  6. Add vanilla bean mix to saucepan over medium heat, stirring constantly until think and coats a spatula.
  7. Transfer to bread pan, freeze overnight.
