- 1 1/3 cup Whole Milk
- 1/2 cup Cocoa Powder
- 3/4 cup Sugar
- Pinch of Salt
- 1/2 Vanilla Bean
- 3 Egg Yolks
- 1 cup Heavy Cream
- 1/2 cup Madhava Extra Virgin Olive Oil

Directions
- Combine milk, cocoa powder, sugar, vanilla bean in a small-medium saucepan, bring to a boil on medium heat.
- Remove from heat and steep for 1 hour, covered.
- After 1 hour, strain the mixture into a mixing bowl.
- In a medium bowl, mix together cream, egg yolks and olive oil.
- Transfer mixture to a small-medium saucepan. Slowly stream heated milk mixture, continuously whisking.
- Add vanilla bean mix to saucepan over medium heat, stirring constantly until think and coats a spatula.
- Transfer to bread pan, freeze overnight.
