Collagen Lemon Energy Bites

Ingredients:
  • 3/4 cup shredded coconut
  • 2-4 tablespoons coconut oil
  • 2 tablespoons Madhava Natural Sweeteners Organic Pure & Raw Honey
  • 2 tablespoons powdered collagen
  • 1/2 cups oats
  • 1/4 cup coconut flour
  • 1 teaspoons vanilla
  • 1 lemon, zested
  • 1 cup Madhava Natural Sweeteners Organic Coconut Sugar

There’s been quite a bit of buzz about the benefits of collagen lately! It’s packed with complete protein and, when taken regularly, can improve the appearance of hair, skin and nails, boosts the metabolism and even helps the body detox, making it an excellent ingredient to add to an afternoon snack like these lemony energy bites.

For this bite-sized snack, simply toss all the ingredients into a blender or food processor, and blend!

Directions
  1. Add all ingredients except coconut sugar to a food processor, and process until well combined and sticky enough to roll into balls. If the mixture is too wet, add more oats and coconut flour; if the mixture is too dry, add more coconut oil.
  2. Roll dough between hands to form golfball sized bites. Roll in organic coconut sugar and store in an airtight container until ready to enjoy!
