Chai Spice No-Bake Protein Bites, Gluten-Free & Vegan

Ingredients:

For the Homemade Chai Spice Blend:

  • 3 teaspoons ground ginger
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground cardamom
  • 1 teaspoon ground allspice
  • 1 teaspoon ground cloves

For the Protein Bites:

  • 3/4 cup gluten-free steel-cut oats (use quick-cook for a softer consistency)
  • 1/2 cup almond meal
  • 1 tablespoon homemade chai spice blend
  • 1/4 cup vanilla protein powder
  • 1/4 cup creamy almond butter, or any nut butter
  • 1/3 cup Madhava Natural Sweeteners Golden Light Agave
  • Extra chai spice blend for rolling

These Chai Spice No-Bake Protein Bites are the perfect thing to make for a sweet afternoon treat, to toss into your kiddo’s lunchbox, or to enjoy in the morning with a freshly brewed cup of coffee. With added protein and hearty steel-cut oats, they’ll keep you fueled on even the busiest days. We sweetened these no-bake bites naturally with Madhava Natural Sweeteners Golden Light Agave for a lighter flavor, but feel free to use our Organic Amber Raw Agave or Organic Fair Trade Blue Agave to make the sweet flavor a bit deeper.

Directions
  1. Place the steel-cut oats in a blender or food processor and blend until fine.
  2. Add remaining ingredients and blend until fully incorporated. If dough is dry and crumbly, add more agave or nut butter.
  3. Roll dough into 1.5-inch balls (about the size of a golf ball), roll in extra chai spice and arrange on a cookie tray lined with parchment paper.
  4. Freeze for at least 30 minutes, then store in an airtight container in freezer or refrigerator.
