Kale And Winter Citrus Salad With Agave-Lime Dressing

Ingredients:

For the Agave-Lime Dressing:

  • 2 tablespoons Madhava Natural Sweeteners Organic Golden Light Agave
  • 2 limes, juiced
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1/2 teaspoon chili powder
  • Pinch of sea salt

For the Kale and Winter Citrus Salad:

  • 1 bunch kale, stems removed and roughly chopped
  • 1 avocado, diced
  • 1 pomegranate, arils removed
  • 1 grapefruit, peeled and wedged
  • 1 blood orange, peeled and wedged
  • 4 small radishes, thinly sliced
  • Handful fresh cilantro, chopped
  • 1/2 cup pepitas
  • 1/3 cup crumbled feta

Make the most of this winter citrus with a hearty kale salad and a flavorful homemade Agave-Lime Dressing. Easily make this a full meal by adding lean protein like baked chicken, grilled salmon, quinoa or tofu!

If you find that kale is a bit too hearty of a green for you, try softening the kale leaves with this trick: in a bowl, drizzle a bit of the dressing over the prepared kale and crunch the leaves between your hands until the dressing is distributed evenly; then, rub the kale leaves between your fingers until they get vibrant in color, more fragrant, and crispy.

For the Agave-Lime Salad Dressing:

  1. In a small bowl, whisk together all ingredients.

For the Kale and Winter Citrus Salad:

  1. Place the chopped kale in a large salad bowl and drizzle with a small amount of the agave-lime dressing. Massage the dressing into the kale leaves until the leaves are darker in color.
  2. Drizzle remaining salad dressing over the kale and toss well to coat. Add remaining salad ingredients and toss again to coat.
