Honey Almond Loaves

Ingredients:
  • 2 cups all-purpose flour
  • 3/4 cup almond flour or almond meal
  • 1/2 teaspoon ground cloves
  • 3/4 teaspoon nutmeg
  • 1 teaspoon ground cinnamon
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3 eggs
  • 1 1/2 cups Madhava Natural Sweeteners Organic Pure & Raw Honey
  • 1 small container (5.3 – 6 ounces) plain Greek yogurt
  • 6 tablespoons unsalted butter, melted
  • 1/3 cup coconut oil, melted
  • Slivered almonds

Directions
  1. Preheat oven to 350 degrees.
  2. In a small bowl, whisk together the first seven ingredients (flour through salt) and set aside.
  3. In another bowl, using a stand or hand mixer, beat the eggs until fluffy, then add the honey, yogurt, butter and coconut oil, mixing until well combined.
  4. Gradually add in the dry mixture, beating on low speed until blended. Spoon the batter into prepared mini loaf pans or muffin tins, filling them about 3/4 full.
  5. Sprinkle the tops with slivered almonds and bake for about 25 minutes or until golden and a toothpick inserted in the center comes out clean.
  6. Cool completely on a wire rack.
