Berry Honey Greek Yogurt Popsicles

Ingredients:
  • 12 ounces berries, we used blueberries and raspberries
  • 2 teaspoons Madhava Natural Sweeteners Organic Coconut Sugar
  • Pinch of sea salt
  • 2 tablespoons + 1/4 cup Madhava Natural Sweeteners Pure & Raw Organic Honey
  • 2 cups plain Greek yogurt
  • 1/2 lemon, juiced

Plain Greek yogurt is sweetened with Madhava Natural Sweeteners Pure & Raw Organic Honey, the fresh berries add a delicious pop of flavor and the lemon juice makes these popsicles tart and tasty. Directions
  1. Preheat oven to 350° F and line a rimmed baking sheet with parchment paper. In a mixing bowl, gently toss berries with Madhava Natural Sweeteners Organic Coconut Sugar, sea salt, and 2 tablespoons Madhava Natural Sweeteners Pure & Raw Organic Honey. Pour mixture onto prepared baking sheet and spread into an even layer. Place in oven and roast for 30 minutes, lightly tossing halfway through.
  2. While berries are roasting, place Greek yogurt, 1/4 cup Madhava Natural Sweeteners Pure & Raw Organic Honey, and lemon juice in a mixing bowl and stir to combine. Add more lemon juice for more tart popsicles.
  3. Allow berries to cool for at least 10 minutes, then add to the bowl with Greek yogurt and fold to combine.
  4. Transfer mixture to popsicle molds (or paper cups with a popsicle stick), insert sticks and freeze overnight. When you’re ready to enjoy, run the popsicle mold under hot water for a few seconds and gently remove the popsicle.
