- 1/3 cup Madhava Natural Sweeteners Organic Very Raw Honey
- 2 tablespoons butter
- 2 Tablespoons Madhava Natural Sweeteners Organic Coconut Sugar
- 1/4 teaspoon cinnamon
- 1 teaspoon vanilla
- 1 cup finely chopped walnuts
- 1 package of phyllo dough sheets

For the filling:
- Heat Madhava Organic Very Raw Honey and butter just until the butter melts.
- Mix Madhava Organic Coconut Sugar with cinnamon and add to warmed honey mixture. Stir in vanilla and walnuts.
For the tarts:
- Layer 4 sheets of phyllo dough on a flat work surface, spraying the top of each sheet with butter-flavored cooking spray (or brushing with butter) before adding next sheet.
- Spray top sheet with cooking spray. Keep unused phyllo dough sheets covered to prevent them from drying out while working.
- Use a large knife or pizza cutter to cut stack of dough sheets into 3-inch squares.
- Pick up a square stack and rotate the top 2 squares, resulting in an 8-pointed star shape, then tuck stack into a cup in a mini-muffin pan to form a tart cup.
- Repeat process for number of tarts needed.
To assemble:
- Spoon a heaping half-tablespoon of filling into each tart cup.
- Bake at 350 degrees for 15 minutes or until phyllo is browned.
- Cool in pan for 1-2 minutes before removing to a cooling rack.
